Ingredients for Avocado relish
Method
Make the avocado relish by combining all the ingredients together; the texture should be fairly smooth with some small chunks inside.
For the tuna tartare, dice the tuna into 8mm cubes then marinade with the rest of the ingredients; the taste should be slightly sour and a little spicy.
To plate the dish, assemble the tuna into a round cake ring, press down and then add the avocado on top. Decorate with finely sliced red chili strips, picked coriander and fresh lime. Serve with deep fried wonton crisps.
About the Chef
A native of Manchester in the northwest of England, Tony arrived in Thailand in 2008 after eight years working in the south of Spain.
He has previously worked at high end properties in Koh Phi Phi and Koh Phangan, joining the Sala Hospitality group in 2012.
Previous to arriving in Phuket he was Regional Executive Chef for the Sala Boutique brand, responsible for the highly acclaimed Sala Rattanakosin, Sala Ayutthaya and Sala Khao Yai properties.
